To make homemade cheese:

  1. Cottage cheese 400 gr
  2. Milk 400 gr
  3. Butter 20 gr
  4. Dried garlic 0.5 tsp
  5. Salt 0.5 tsp
  6. Sugar 0.5 tsp
  7. Soda 0.5 tsp


  1. A small bunch of dill to taste
  2. Paprika and dried garlic to taste

1. Cottage cheese previously knead a little pusher. Add cottage cheese to milk, put on medium heat and heat until yellow serum begins to separate. Warm up for another 2-3 minutes. 2. Transfer the future cheese to a sieve so that excess whey is removed from it. Already now you can see if you have quality cottage cheese. If the cottage cheese is of animal origin, then after heating it stretches a little. 3. Put butter in a saucepan, transfer cottage cheese, add salt, sugar, dried garlic and 1/3 tsp. soda. On low heat, constantly stirring, we begin to melt the cottage cheese. If you see that the cottage cheese does not melt well, add a little serum and soda and swim further, stirring constantly. I do not add more than ½ tsp. soda without a slide, even if there is a small grain of cottage cheese. Most of them will disperse anyway when the cheese cools down, and if not, let the grains of cottage cheese be better than the unpleasant taste of soda. 4. The cling film can be optionally sprinkled with dried garlic and paprika, put the cheese and roll the sausage. You can simply put it in a round bowl, having previously lightly greased it with a thin layer of vegetable oil. I leave the cheese to cool in an upright position to maintain its cylindrical shape. 5. We are waiting for the cheese to cool completely, then put it in the refrigerator for 3-4 hours. Ready cheese can optionally be rolled in finely chopped dill.
